Copper Head 2

I decided to make the award winning CopperHead again for a Holloween party. In general I followed the same recipie but with all hop pellets instead of some whole hops.

CopperHead;

Ingredients for 6 U.S. gallons (23 liters)
Target Original Gravity: 1.066 (16.21 Plato)
Approximate Final Gravity: 1.016 (4.08 Plato)
Brewhouse Efficiency: 70%
Anticipated SRM: 17
Anticipated IBU: 23.8
Anticipated ABV: 6.66%
Wort Boil Time: 90 minutes

12 lb (5.44 kg) British Pale Malt 3L
1 lb (0.45 kg) Crystal 40L
1 lb (0.45 kg) Munich Malt 8L
0.50 lb (0.22 kg) Victory Malt 25L
0.50 lb (0.22 kg) Crystal 120L
0.25 lb (0.11 kg) Pale Chocolate Malt 200L

0.5 oz. (14 g) American Summit pellet hops, 10% alpha acid (20 min.) (6.4 IBU)
0.5 oz. (14 g) New Zealand pellet hops, 7% alpha acid (20 min.) (4.5 IBU)
1 oz. (28 g)
American Summit pellet hops, 10% alpha acid (10 min.) (7.6 IBU)
1 oz. (28 g)
New Zealand pellet hops, 7% alpha acid (10 min.) (5.3 IBU)
1 oz. (28 g)
American Summit pellet hops, 10% alpha acid (0 min.) (0 IBU)

Yeast: Used dry yeast Safale US-05 x2. Ferment at 68F (20 C).

Directions and brewing notes:

Strike water target 162
*which still seems a little high..had to add 1/2 gal of water to reduce temp a little
Single infusion mash at 152F (68C) using 4.5 Gallons of water.

90 minute boil enhances the blood-red color. It also adds a touch more melanoidin and caramel notes.

OG; 1.072

3pm. Placed in fermentation chamber at 88d. Air temp is 67d
11pm Now at 75d. I pitched yeast.



10/15 Dry hoped with 2oz American Summit pellets at 2 weeks after transfering to a secondary. Gravity @ 1.020. Seems a little high. i should have taken some readings and swirled the carboy instead of transfering to secondary.

10/18. Gravity @ 1.020.

ABV 6.7%


10/21 Started cold crashing. Reduced the temputre by about 5d every 4 to 6 hours to a frosty 38d.
10/21 Transferred to my first keg for the party and it did taste very nice. A little less hops and a little more sweet then the first batch.
10/21 Keg is at 40d under 10psi so it should carb up nice for the party.
